Roasted Salmon and Kale Avocado Salad Recipe

Have you been looking for quick healthy recipes to help you keep your New Year Resolutions? I usually have a hard time staying motivated to cook, but these recipes make it so easy! They are super quick, healthy, and delicious. The salmon takes no more than 15 minutes and the salad takes just a few! Bon Appetit!

Roasted Salmon with Kale Avocado Salad

 

ROASTED SALMON

INGREDIENTS

  • 1 6oz filet of salmon
  • 1/2 bunch of asparagus
  • drizzle of extra virgin olive oil
  • garlic powder, to taste
  • sea salt, to taste
  • black pepper, to taste

DIRECTIONS

Preheat your oven to 400 degrees F. Place the salmon on a baking sheet. Season the salmon with sea salt, garlic powder, and pepper to your taste preference.  Roast the salmon for 10-12 minutes or until it's cooked to your liking.

KALE AVOCADO SALAD

INGREDIENTS

  • 2 cups chopped kale
  • 1/2 avocado, cubed
  • 1T dijon mustard
  • 1T olive oil
  • 1/4 apple, chopped
  • sea salt, to taste
  • black pepper, to taste
  • dill, to taste

DIRECTIONS

Place all ingredients in a bowl and massage well.
